Fried plantains with irish potatoes egg sauce

Ingredients

  1. 2medium size ripe plantain
  2. 3irish potatoes (diced)
  3. 2eggs
  4. 1medium size onion (chopped)
  5. 2 tbspcorned beef (optional)
  6. Curry, thyme, stock cubes, salt, pepper (to taste)
  7. Vegetable oil for frying

Cooking Instructions

    Wash, peel, cut and fry your ripe plantain and set aside

  2. 2

    Put the corned beef in a pan with half the onions and cook without water, stirring steadily to avoid burning

  3. 3

    When the corned beef is heated up, season and add a little water (enough to cook the irish potatoes dry. If in doubt, add the water bit by bit)

  4. 4

    Add the chopped irish potatoes and cover the pot, allowing it to cook

  5. 5

    When the potatoes are tender, and the water is dry

  6. 6

    Move the sauce to one side of the pan and put two tablespoons of the vegetable oil you used for frying on the other side

  7. 7

    Break the eggs, season it and add the other half of the diced onion

  8. 8

    Turn the eggs into the pan and scramble for a minute or two, then, mix together with the sauce

  9. 9
