Assemble everything.

Take 1 glass water in a pressure cooker add turmeric, salt and tur dal. Add veggies like raw banana, pumpkin potato, papaya and cook on medium high flame for 1 whistle

Open lid add brinjal, drumsticks, peas add salt, tej patta,some water and pressure cook for 1 whistle on medium low flame

In a pan add oil, panch phoran, red chillies,hing add ladyfinger and tomatoes till soft. Add dal veggies and stir

Add masala, grated coconut and cook for 5 mins. Serve hot

Shukto Mishmash of vegetables
Shukto is a mishmash of different vegetables often cooked in Bengali household. Bori or dried lentil dumplings are added to this dish. You can prepare them at home or buy them from the stores. The star of the dish is bitter gourd. Other vegetables like drumstick, eggplant, plantain or raw banana, raw papaya preferably cut to the same size are added to the shukto. The golden rule that I have learnt from my mother is, you do not add turmeric and pepper to the shukto. Basically, it is a perfect dish for Indian summers. The spice that is used to prepare shukto is radhuni or wild celery. This is a unique spice used mostly in Bengali cuisine. As you smell radhuni you know that shukto is being cooked in the kitchen. However, if radhuni is not available methi/fenugreek seeds can be used instead.#nogarliconion #everydayveg

Here i have used the combinatuon of the northen and eastern spices to cook . It is even said that kathal is cooked a day before and served the next day. The more it rests the more flavour is imparted. So very interesting !!
