Ingredients

  1. 2small cups quinoa
  2. 1zucchini
  3. 1bell pepper
  4. 1onion
  5. 3 1/2 ozcooked chickpeas (about 100 grams)
  6. Vegetable broth
  7. 1 tablespoonRas el hanout
  8. Oil and salt

Cooking Instructions

    Cook the quinoa: I use a steamer with two measures of vegetable broth for 14 minutes.

    Wash and dice all the vegetables into small cubes.

    Start by sautéing the zucchini without salt so it doesn't lose water. Then add the bell peppers and onion.

    Sauté until the vegetables are tender but still firm. Add the chickpeas to lightly brown them.

    Add the cooked quinoa to stir-fry. Add Ras el hanout, salt, and other spices to taste.
