Unripe plantain with stir fry veggies poached eggs

Fried foods are tasty, so I wanted my dad to enjoy that tasty meal we were having (boil ripe plantain with fry egg sauce) so that he didn't feel left out. I then decided to make his meal less fatty and healthy putting his age into consideration. The veggies were not overcooked so he enjoyed it.

Cooking Instructions

Boil the unripe plantain in salted water

Prepare the poached eggs

Chopped all the vegetables (onions,tomatoes and pepper), garlic and ginger

Heat the oil in a saucepan, then add in the chopped vegetables, garlic,ginger, salts and seasonings. Stir and allow to simmer a bit, do not overcook the vegetables.

Add in the poached eggs, taste and correct for salt if necessary.

Serve with the boiled unripe plantain

I have granddaughters and I just want them to enjoy the same foods as everyone else. Just because it is a certain type of food, doesn't mean it has to have someone left out. I left out the heat. When I was growing up sometimes someone would not like what we were having. So my Mom would cook something extra but different than what everyone was eating. So I had one daughter not liking potatoes, unless French fries, so I cooked her rice. My other daughter didn't like eggs so I cooked different for her.
