Ingredients

45 minutes plus 8 hours of marinating
3 people
  1. 3 poundschicken thighs, skinless and boneless
  2. Salt
  3. 8 teaspoonsfinely grated fresh ginger
  4. 8 teaspoonslime zest
  5. 6 tablespoonsmayonnaise
  6. 6 tablespoonsplain Greek yogurt
  7. Ground black pepper

Cooking Instructions

45 minutes plus 8 hours of marinating

    Wash in clean water and dry chicken on a plate. Add a generous dash of salt over chicken and massage to spread salt.

    In a small bowl mix ginger, lime zest, mayonnaise, yogurt, a dash of salt and ground black pepper.

    Coat all sides of thighs with mixture and wrap plate with plastic film. Refrigerate for 8 hours.

    Preheat oven to 425 degrees F.

    Place thighs on a lightly oiled baking dish. Cover in aluminum foil. Cook in oven for 20 minutes.

  6. 6

    Remove aluminum foil. Continue cooking, if necessary, until internal temperature in the thickest part of the largest thigh reaches 165 degrees F (15 more minutes). Remove from oven and let rest, covered, for 10 minutes before serving.
