Chicken & Cabbage with Tomatoes

I often make simmered chicken and vegetables in tomato sauce, but today I had a lot of cabbage leftover so I tried making a simple cabbage and chicken dish.

If you prefer very soft cabbage, steam for a little bit longer before adding the tomatoes.
If you don't have diced tomatoes, you can use canned whole tomatoes. Crush them as you add them in.
Besides cabbage, you can use eggplant, zucchini, onion, bell peppers, etc. to make a wonderful dish. Recipe by JACK0904

Ingredients

2 servings
  1. 1/2Chicken thigh or breast
  2. 1/4 headCabbage (medium)
  3. 1 canCanned diced tomatoes
  4. 1 tbspOlive oil
  5. 50 ml☆White wine
  6. 1 tsp☆Chicken consommé granules
  7. 1*Oregano
  8. 1★Salt and pepper
  9. 1 pinch★Sugar

Cooking Instructions

    Cut the chicken and the cabbage into bite-sized pieces. I also used 1 small eggplant.

    Heat olive oil in a pot. Lightly cook the surfaces of the chicken.

    Add the cabbage and the ingredients. Cover with a lid and steam.

  4. 4

    Remove the lid after 1-2 minutes. The chicken and the vegetables should be pretty much cooked through.

    I recommend using an Italian brand of canned tomatoes.

    Add the tomatoes and the ingredients. Cover with the lid again and simmer for 5 minutes.

    Season with ★ and it's done.

    Serve on a dish and, if you have it, garnish with basil.
