Easy Nanban-style Curried Soboro and Daikon Radish

When vegetables are expensive, you can still buy cheap daikon, so I made this recipe to use daikon.

I added lots of photos, so it should be easy to follow.
Rather than adjust the size of the daikon chunks, adjust the amount of seasoning to your liking.

Ingredients

3 servings
  1. 400 gramsGround pork
  2. 1/2Daikon radish (small)
  3. 2Japanese leek
  4. 1 piece1 dash bigger than the size of your thumbtip Ginger
  5. 1 tbsp☆Sake
  6. 1/2 tsp☆Sugar
  7. 90 ml☆Mentsuyu (3x concentrate)
  8. 250 ml☆Water
  9. 1 tbspCurry powder
  10. 1 dashSoy sauce
  11. 1Katakuriko slurry

Cooking Instructions

    Peel the daikon and cut into small sized chunks of even size (rangiri cut).

    Grate the ginger.

  3. 3

    Cut the leek into oblique slices.

  4. 4

    Add a little oil to a pan and cook the ginger until aromatic.

  5. 5

    Add the ground pork and fry.

  6. 6

    When the meat is cooked through, add the daikon. Stir to coat well in oil.

    Add in the ☆ Ingredients and mix.

  8. 8

    Cover with a lid and simmer over medium heat.

  9. 9

    When the daikon has become somewhat soft, add the leek and curry powder.

  10. 10

    Mix, cover with a lid and steam until the leeks reach the softness you like. Add in the dissolved katakuriko to thicken the sauce.

    Finally, season the dish with soy sauce. Transfer to a serving dish and enjoy!
