Idli sambhar is a South Indian dish. In this ramadan I prepared it in iftar due to its benefits. It is antioxidants ,rich on protein, full of fires and easy to digest. So to avoid oily eating it is best option to eat something healthy.

Ingredients

  1. For idli
  2. 1.5 cupsemolina/rava
  3. 1 cupcurd
  4. 1/2 tspbaking soda
  5. 1 tspsalt
  6. as required Water
  7. For sambar
  8. 1/4 cuptoor dal
  9. 1/4 cupchopped pumpkin
  10. 1/4 cupcarrot chopped
  11. 1/4 cupchopped bottle gourd
  12. 1medium brinjal chopped
  13. 2 tbsptamarind pulp
  14. 1 tspturmeric powder
  15. to tasteSalt
  16. 1 tspginger grated
  17. 2 tbspsambhar masala
  18. 1 tspkashmiri red Chilli powder
  19. as requiredChopped coriander leaves
  20. For tempering
  21. 1 tspurad dal
  22. 1/2 tspmustard seeds
  23. as requiredFew curry leaves
  24. 1 pinchasafoetida
  25. 1 tbspoil

Cooking Instructions

    In a mixing bowl take rava, add curd whisk well. Add 1/2 cup water mix again.cover and keep aside for 15-20 minutes.

    Soaked the dal into water for 30 minutes.wash and chopped all the vegetables. In a pressure cooker add soaked dal and all veggies.add turmeric powder and 1 tsp salt.add 2 cups water and pressure cook for 3 whistle.

    Open the cooker the dal and veggies has cooked perfectly.mash with ladle or masher.add all spices, tamarind pulp and sambhar masala. Mix all. if needed add some water. Cook it for 4-5 minutes.add chopped coriander leaves. Mix.and remove from gas keep aside.

    For preparing tadka add oil in tempering pan,when it heated add mustard seeds,urad dal,curry leaves and asafoetida.when they spluttered remove from heat. Add this tempering to freshly prepared sambhar. Now sambhar has ready so we start to make idli.

    Take idli batter add 1 tsp salt and baking soda.add some water mix again.pour the batter into greased idli mould.put the mould in microwave safe bowl.place this bowl in microwave and cook for 3 minutes. Prepare all idlis

    Serve the Idli with sambhar and coconut chutney.
