Bacon with Cauliflower

The fridge was pretty barren, just a head of cauliflower, 1/2 an onion, some arugula and a little bacon.

You get a lot more product from the frozen chopped kale. Its already wilted from being blanched. So it won't shrink and you know how many portions you will have. If you don't have Canadian bacon use a good ham. Serve with a little red wine vinegar as an option or even hot sauce.

I was very curious about kale so I needed a recipe to try for the first time. So I found this on Food Network. This is a recipe from Rachel Ray. I substituted Panchetta with bacon. And it still turned out great!

Threw this together for dinner last night. Turned out pretty well.

One day when cooking seemed tedious, I threw together this simple dish over rice and it got rave reviews, so I recreated it and posted the recipe.Since the flavor is strong, it is best eaten over rice. Personal tip - I don’t have luck pouring liquids from 1 pot to another I usually transfer to a measuring cup or something. Ya I dirty more dishes and it takes a bit longer but I do not have a mess spilled all over my counter and stove.

This is a dish I don't mind cooking for myself since I am the only one who eats it at home. Not everyone is a fan of brussel sprouts but I became a fan when I went to an Italian restaurant owned by Chef Fabio from Top Chef. I ordered brussel sprouts and they were amazing. I didn't ask for the recipe but figure out it had bacon. I added my own touch and I fell in love. Can't stop making them since then.
