Pan Fried Cod with Leek Sauce

Fresh cod is in season in the middle winter.
I wanted to serve tender and lightly flavored cod with a flavorful sauce.

Pan fry the cod until crispy to make it look tasty.

Ingredients

2 servings
  1. 2pieces Fresh cod filets
  2. 1 dashSalt and pepper
  3. 1 tspSake
  4. 1Flour
  5. 1 tspplus Vegetable oil
  6. For the sauce:
  7. 10 cmJapanese leek
  8. 1 pieceGinger
  9. 1/2 cloveGarlic
  10. 1 tspplus Vegetable oil
  11. 2 tspSoy sauce
  12. 2 tsp☆ Sake
  13. 1 tspplus ☆ Mirin
  14. 1 pinch☆ Dashi stock granules
  15. 1 tspSesame oil
  16. 1add as much (to taste) Vegetable sides

Cooking Instructions

    Season the cod filets with salt and pepper, drizzle on a little sake, and let sit for a while.

    Finely chop the leek, ginger and garlic. Combine the ☆ ingredients.

    Pat the cod dry with paper towels, and dust with flour.

  4. 4

    Heat some oil in a frying pan. Shake any excess flour off the cod and put them in the pan. Cook until browned on both sides, then remove to a plate.

    Wipe the frying pan out quickly, add fresh oil and saute the garlic and ginger. When it starts to smell nice add the leek and saute it quickly.

    Add the combined ☆ ingredients. When it's bubbling add the sesame oil and turn off the heat.

    Pour the sauce over the cod. Serve while still hot.

  8. 8

    I added shimeji mushrooms and pre-boiled sweet potatoes. Just stir fry in oil and season with salt, pepper and a little butter. Please add to your taste.
