Cabbage and Bean Sprouts Stir Fried in Miso Butter

I wanted to make a dish using lots of cabbage. This is filling even without any meat in it! It really goes well with rice.

The seasonings are on the salty side, but they'll be just right when cooked with the vegetables since the vegetables will exude a lot of moisture.
When stir-frying the vegetables, add the cabbage at the end so that it doesn't get mushy.
This is a matter of taste, but I think it's best if this is salted generously, since the salt enhances the butter and makes the stir fry go really well with plain rice.

  1. 1/3Cabbage
  2. 100 gramsBean sprouts
  3. 1/2Carrot
  4. 1/2Onion
  5. 20 gramsButter
  6. 1 tbspMiso
  7. 1 tbspSake
  8. 1 tbspMirin
  9. 1 1/2 tspSoy sauce
  10. 1Salt

Cooking Instructions

    Combine the miso, sake, mirin and soy sauce. Cut the cabbage into 3 cm pieces. Cut the carrot into 5 mm thick slices then finely julienne. Slice the onion thinly.

    Add the butter to a large frying pan, and stir fry the bean sprouts, carrot and onion.

    When the vegetables are wilted, add the cabbage. Add the combined flavoring ingredients. Taste and adjust the seasoning with salt, and it's done.
