Kachumber salad with eggs

This salad is a fun take on every Pakistani, Indian favourite salad. Add eggs to make this lunch salad both delicious and protein rich.
This salad is a twist on the classic Caesar salad and Kachumber salad.
Kachumber salad is easy, classic and the ingredients are simple. Kachumber is a simple chopped salad with onions, tomatoes, cucumbers and a salt, pepper, lemon dressing. Kachumber Salad adds a crunchy fresh, juicy, and cooling flavour and texture to the foods and works well with hot and spicy or other sharp flavours.
Serve as a side with Indian curries, or as a dip with chips, or over burgers.
This is a very straightforward recipe!! Everything is chopped up and combined in a bowl! That is all there is to it! To the classic salad I add some chopped lettuce, eggs, crackers and feta.

Ingredients

  1. 2hardboiled eggs
  2. 1/2cucumber, chopped
  3. 1/2 cuplettuce, chopped
  4. 4-6cherry tomatoes, halved
  5. 2 tbsp.red onion, chopped
  6. As required, crackers, toasted
  7. To taste, salt
  8. To taste, pepper powder
  9. 2 tbsp.lemon juice
  10. 2 tbsp.feta cheese, crumbled

Cooking Instructions

    Peel and slice the eggs in half and set aside.

    In a bowl combine all the vegetables except lettuce.

  3. 3

    Season to taste with salt and pepper and lemon juice. Mix well to coat the veggies.

    Arrange lettuce on a plate and add the salad..

    Arrange egg slices in centre and sprinkle salt and pepper.

  6. 6

    Add the crackers, cut to bite size, and sprinkle feta over the salad.

    Serve immediately.
