Light and Airy Cod Piccata

I had some cod left over which had to be used!

Use fresh eggs and cook the piccata patiently over low heat. Don't forget the lid.

Ingredients

  1. 6pieces Cod
  2. 3 tbspFlour
  3. 2 tsp● Salt and pepper
  4. 1★ Beaten egg
  5. 2 tbsp★ Green onions (sliced very thinly)
  6. 1 tbspOil (for cooking)

Cooking Instructions

    Cut the cod into 5 pieces.

    Mix the ingredients marked ● together, and sprinkle over the cod.

  3. 3

    Mix the ingredients marked ★ together in a bowl. Coat the cod from Step 2 with the egg mixture.

  4. 4

    Heat some oil in a frying pan over low-medium heat. Put in the cod, cover with a lid and steam-fry.

  5. 5

    When the cod pieces have browned, turn them over. Put the lid back on and steam-cook until browned on the other side, and they're done!
