Amaranthus leafy vegetables are of two types, available in current time. It's full of nutrients and the taste is amazing. I have prepared and posted many variations of the recipes of Amaranthus "Koshla Saag" in my state Odisha.

Here, I present a traditional recipe from my state Odisha, where split yellow moong dal, Koshla Saag and vegetables are cooked to prepare a healthy and delicious recipe.

Ingredients

25 minutes
4-6 servings
  1. 1 cuproasted yellow moong daal
  2. 1 bowlchopped Vegetables,(raw banana, sweet potatoes, radish, cauliflower florets)es (raw banana, sweet potatoes, radish, cauliflower florets)
  3. 2 cupswashed and chopped green Amaranthus leafy vegetables with young stems
  4. 3tomatoes
  5. 3onions chopped
  6. 1.5 Tbspgrated ginger
  7. 2green chillies
  8. 1dry red chilli
  9. 2 Tbspvegetable oil
  10. 2 Tbspvegetable oil
  11. 1 Tspponch phutan
  12. 1/5 Tsphing
  13. 1/3 Tspturmeric powder
  14. Salt as required
  15. 1/2 cupdesicated coconut powder
  16. 1 Tbspghee (clarified butter)

Cooking Instructions

    First, wash the daal and transfer to the pressure cooker to boil without cover.

    When the daal boiled add chopped vegetables and whole tomatoes. When the whistle is about to blow, switch off the flame.

    Add the Amaranthus leafy vegetables and cook till soften.

  5. 5

    In kadhi heat oil, add and allow to splutter ponch phutan. Further add hing, dry red chilli and chopped onion. When onion gets translucent add boiled tomatoes.

    Cook in low flame adding grated ginger and dessicated coconut powder.

    Mix well and cook till aromatic. Mix this masala paste with the boiled daal, veggies and amaranth leafy vegetable.

    Bring to boil and add the ghee and keep covered for sometime. Delicious amaranth veggies Dalma is ready to serve with Roti/ Paratha/Poori/ Rice/Khichudi.
