I made a simple dish using in-season cod in something other than a hot pot.

If using fresh unsalted cod instead of lightly salted cod, season it with salt and pepper before wrapping in foil. For 2 servings. Recipe by Chizu kicchen

I made a simple dish using in-season cod in something other than a hot pot.

Ingredients

2 servings
  1. 2pieces Cod (lightly salted)
  2. 1/2Japanese leek
  3. 1/2pack each Shimeji mushrooms, enoki mushrooms
  4. 2 tspButter or margarine

Cooking Instructions

    Slice the leek diagonally. Cut the stem ends off the mushrooms and shred apart into small clumps.

    Put the cod, mushrooms and leek on a large piece of aluminium foil in that order. Top with a teaspoon of buter and black pepper. Make 2 foil packets.

    Close up the foil.

    Put the foil packets in a frying pan. Cover with a lid and cook over medium heat for 5 minutes, and an additional 3 minutes over low heat. Done.

    Eat sprinkled with a little ponzu sauce. The cod is already flavored, so go easy on the sauce.
