I tried making a stir-fry with snake gourd, similar to asparagus, using tuna and mayo. It's a rare find but surprisingly easy to use and delicious!

Origin of this recipe
I bought snake gourd for the first time at a roadside station. Following the sesame stir-fry (Recipe ID: 18878847) and butter soy sauce stir-fry (Recipe ID: 19162623) taught by Noburinko, this is my third attempt at cooking it! It was delicious, so I'm keeping a note of it.

Ingredients

  1. 1snake gourd (serpent gourd)
  2. 1 cantuna
  3. 1 tablespoonmayonnaise
  4. 1/2 teaspoonsoy sauce
  5. Salt, to taste
  6. Pepper, to taste

Cooking Instructions

    Peel the snake gourd thinly with a peeler, cut it in half lengthwise, remove the seeds, and slice it diagonally into pieces about 1 1/4 inches long.

    Place the tuna can with its oil in a frying pan and heat it (no need to add extra oil as the tuna oil is used).

    Add the snake gourd and stir-fry lightly, then add mayonnaise and soy sauce and mix well.

    Season with salt and pepper to taste, and it's ready to serve.
