Saffron Rice Saffron Rice
Rice is to the Middle East what pasta is to Italy. While rice is a staple in Asian countries, there it is typically served plain; the flavors coming from the sauces for the vegetables, meat or legumes. Iraqi and particularly Iranian rice dishes, on the other hand, are known for their flavours, colours and, especially, their presentation. The way we serve them is something of a ritual. Having more than one rice dish at a meal is not unusual. Sometimes we even make a rice crust on the bottom of a dish so that, when served turned upside down, it looks like a cake.It took me a long time to get used to making a smaller quantity of rice for dinner. When I was growing up, my mother would serve everyone a big mound of rice topped with whatever stew she had cooked that day. We’d eat the rice with a spoon or by scooping it up with a piece of hubus, or flatbread. I guarantee you that in any traditional Iranian home you’ll find a huge pot of rice on the stove. The Iranian and Iraqi method of preparing rice: partially cooking it, draining it, then returning it to the pot with fried onion and a touch of water and continuing to cook it very slowly. This method results in delicious dry, almost crispy, rice, but it is time-consuming and the rice loses some of its nutritional value. Here’s my way: Souad Sharabani -

This is one recipe that is in constant use in my household. It is often one of the first dishes to disappear at our get-togethers. It is a simple recipe and is easily modifiable. It is lightly flavored with tomato, but has plenty of other spices going on. I prefer basmati rice because of the texture and fragrance, but use whatever rice you happen to have on hand. It'll be a sure success! Izandro -
Rice topped with Greek Yogurt Rice topped with Greek Yogurt
You are probably wondering what kind of recipe this is or if this is a recipe at all. Well, this easy one step recipe is so healthy, full of proteins, and carbohydrates and sooooo good for you. When we first moved to Greece, I stayed at my cousins house until we were settled in to our home. My aunt asked me if I wanted to try some rice with yogurt for lunch, I wasn’t sure what it was but I knew it had to be tasty.. A couple of minutes later she handed me a bowl of rice and yogurt, I looked at it as if it was something from out of this world. My cousin on the other hand, took her bowl and started to combine the yogurt throughly into the rice. I followed her lead and guess what; it was and still is seriously that good!!. 🙂Instead of just having a bowl of plain rice or a bowl of plain yogurt try this wonderful simple, and yet tasty rice dish. (I prefer brown rice with yogurt but wasn’t able to find any so I used white rice in my recipe).I have tweaked my aunt’s original recipe to make it a bit more tastier, and I do hope you enjoy it. 🙂 Foodzesty -
