Ingredients

  1. 2ripe plantains
  2. 2eggs
  3. 1/2 cupflour
  4. 1 tspbaking powder
  5. 1/2 tspsalt
  6. 2 tbspsugar
  7. 1 tspvanilla extract
  8. 1/4 cupmilk
  9. 2 tbspbutter
  10. 2 tbspbutter
  11. spices to taste

Cooking Instructions

    Peel and slice the plantains into small pieces

    In a blender, blend the plantains until they are smooth.

    In a mixing bowl, whisk the eggs and add the blended plantains.

    Add the flour, baking powder, salt, sugar, vanilla extract, and milk to the mixing bowl and mix until well combined.

    Melt the butter in a non-stick pan over medium heat.

    Pour ¼ cup of the pancake batter into the pan and cook for 2-3 minutes on each side or until golden brown.

    Repeat with the remaining batter.

    Everyone Serve warm with your favorite toppings such as maple syrup, honey, or fresh fruit.
