Jowar is rich in protein, iron and fiber. Jowar also acts as an antioxidant. Diabetic patients are advised to eat Jowar dishes. Jowar is also very useful in weight loss.
Many dishes like dosa, vada, uttapam, roti, upma, khichdi can be made from Jowar. Today I added vegetables to Jowar and made Jowar Vegetable Khichdi.

Ingredients

  1. 1small bowl Split Jowar
  2. 2 tbspOil
  3. 1 pieceCinnamon
  4. 2-3nos Cloves
  5. 1 tspcumin
  6. 1 tspAsafoetida
  7. as required Green Neem
  8. 1 tbspChopped green chillies
  9. 1 tspGinger chili paste
  10. 1/4 cupGreen peas
  11. 1/4 cupChopped red capsicum
  12. 1/4 cupChopped yellow capsicum
  13. 1/4cupChopped green capsicum
  14. 1/4 cupBoiled corn kernels
  15. 1 tbspGaram Masala
  16. 1 tsppepper powder
  17. according to taste Salt
  18. 1/2 cupButtermilk
  19. Coriander for garnishing

Cooking Instructions

    Jowar should be washed with water and soaked in water overnight. Then boil it in a cooker for 6-7 whistles.

    Heat oil in a pan and add cinnamon, cloves, cumin seeds, asafoetida, neem and green chillies.

    Then add ginger-chili paste, green peas and chopped red capsicum.

  4. 4

    Chopped yellow and green capsicum and boiled corn kernels are also to be added.

    Then add pepper powder, garam masala and salt according to taste. Then add boiled jowar and buttermilk and mix everything well and let it cook for two minutes.

    Now if everything is cooked properly then garnish it with coriander.

    This is how I have decorated Jowar Vegetable Khichadi with colorful capsicums and served it.
