Ingredients

  2. 1/2 cupRaw Sesame Seeds
  3. 1medium Onion (sliced)
  4. 1 bunchScallions (roughly chopped)
  5. 1 headGarlic (peeled)
  6. 1stem Celery (sliced)
  7. 1/2 cupSichuan Peppercorns
  8. 1/4 cupStar Anise
  9. 6Bay Leaves
  10. 2Cinnamon Sticks
  11. 3 ozDried Whole Chilli Peppers
  12. 2000 mlVegetable Oil
  13. 3/4 cupVegetable Oil (for mixing with chilli powder)

    Prepare Chili Powder Mixture:

    In a bowl, mix 2 cups cayenne chilli powder, 1/2 cup raw sesame seeds, and 3/4 cup vegetable oil. This helps prevent the chili powder from burning when heated.

    Combine sliced onion, roughly chopped scallions, peeled garlic cloves, sliced celery, Sichuan peppercorns, star anise, bay leaves, cinnamon sticks, and dried chili peppers with 2000 ml vegetable oil in a pot.

    Heat on medium-high until the temperature reaches 350°F to 375°F (175°C to 190°C). Remove aromatics until only oil remains.

    Combine Oil and Chili Powder Mixture:

    • Pour the hot oil into the chili powder mixture and stir well to combine. Enjoy!
