Ingredients

  1. 1/3 cupyellow onion, finely diced
  2. 3large garlic cloves, peeled and smashed
  3. 1jalapeno or serrano pepper, seeded and finely diced
  4. 1/4 cupfresh cilantro, roughly chopped
  5. 1 teaspoonwhole cumin seeds
  6. 1 teaspoonkosher salt
  7. 1lime, juiced
  8. 2large or 3 medium ripe avocados

    Add the onion, garlic, pepper, half the cilantro, cumin and salt to a molcajete.

    Crush and grind until the cumin seeds are ground and a silky paste forms, about 3-4 minutes.

    In a bowl combine the onion mixture, avocados and lime to taste. Mash with a fork until the desired consistency (I like mine a bit chunky). Add more salt as needed.

    Stir in the remaining cilantro and enjoy!
