Good comfort meal that can be made in one skillet. Instructions include three meats: shrimp, beef, and chicken. You can easily prepare this dish with fresh veggies or tofu. Feel free to play with it and make it your own!
Cooking Instructions

Thinly slice chicken and beef.

Heat oil on a large skillet or wok.

Add garlic and the lower, whiter ends of the green onion (save top of onion for serving) stir for about 30 seconds.

Add meat and seasonings and cook until meat is done.
- 5
Add fresh broccoli and continue to simmer in curry until tender.

Serve on steamed jasmine rice and top with fresh cilantro and green onion.

Optional: Serve with fresh lime wedges. For extra spice, add fresh jalapeno slices to the curry or as a garnish.

I made this curry very often and tried to perfect it. I like this balance of ingredients, but you can adjust to your liking. More curry paste for more spice, more coconut milk for a softer taste. My girlfriend cant take it when food is too spicy and I like spicy, but this balance is perfect for both of us. Pick a good curry paste, some are without additives with only fresh herbs. You can also make the curry paste yourself but you need a lot of exotic herbs and a good recipe. Enjoy! sjonnie -

Several months ago I posted a recipe for green seafood curry. Today it's red's turn. To be honest, I actually prefer red curry to green. I love the extra kick of heat. The addition of sweet bell pepper gives this version a bit of additional freshness, almost like a fruitiness. As written below, this curry is pretty mild (so that my daughter could eat it).
