Ingredients

  1. 1 tbspCanola Oil
  2. 1 largeJalapeno Pepper (sliced in half lengthwise)
  3. 3 cloveGarlic (smashed)
  4. 1/4 tspCumin Seeds
  5. 1/4 tspSesame Seeds
  6. 2 largeCarrots (1/4-inch slices)
  7. 1 lbGround Pork
  8. 2 tbspPatak's Hot Curry Paste
  9. 14 ozThai Kitchen Light Coconut Milk
  10. 1 tspSalt
  11. 1 1/3 cupFrozen Sweet Peas

Cooking Instructions

    In a medium saucepan over medium-low heat, add canola oil, jalapeno, garlic, sesame seeds, and cumin seeds. Saute for 10 minutes stirring occasionally to toast seeds and flavor the oil.

    Remove the jalapeno and set aside. Increase the heat to medium and add the carrots and ground pork. Cook until pork is completely cooked through, then remove as much of residual fat as possible.

    Stir in curry paste, coconut milk, salt, and peas. Return jalapeno and simmer entire mixture for 10-15 minutes over medium heat.

    Serve over white rice.
