  1. Ingredients
  2. 1 3/4 cupflour
  3. 3/4 cupsugar
  4. 2 1/2 tspbaking powder
  5. 1/4 tspsalt
  6. 1egg, beaten
  7. 3/4 cupmilk
  8. 1/3 cupcanola oil
  9. 1/2 cupchopped pecans
  10. 1 cupfresh or frozen raspberries
  11. 1/2 tsplemon peel

Cooking Instructions

    preheat oven to 400° F

    mix flour, baking powder, sugar, and salt in large bowl

  3. 3

    combine egg, oil, and milk in small bowl

  4. 4

    stir until just moistened thoroughly

  5. 5

    mixture will be lumpy

  6. 6

    fold in raspberries, pecans, lemon peel

  7. 7

    line muffin pan with liners

  8. 8

    fill 2/3 full

  9. 9

    bake at 400° F for 20 to 25 minutes or until golden

  10. 10

    serve warm

  11. 11

    enjoy
