Just plain cornbread doesn't do it for us. A bit of zip makes it more fun to eat. I keep a box of mix in my pantry so if the urge hits, we can have this almost in an instant. Great side to chilli, meatloaf or a roast chicken. Enjoy the taste and simplicity.

Ingredients

6 servings
  1. 1box jiffy corn bread mix, 8.5 ounce
  2. 1/4 cupfrozen corn, thawed
  3. 3/4 cupgrated cheddar cheese, divided
  4. 1/2 cupcooked black beans
  5. 1thinly sliced jalapeno pepper
  6. 1 tbsphoney
  7. 1/4 cupsliced black olives
  8. 1/4 tspsalt
  9. 1 tbspmelted butter

Cooking Instructions

  1. 1

    Prepare corn bread mix according to package directions. (One box, 1 large egg, 1/3 cup milk.)

    Gently fold in other ingredients. Leave out the jalapeno.

    Place mix into well buttered 5x7 baking dish. I also may use a quart round baking bowl

    Top with the jalapeno peppers.

    Bake in a preheated 400 degree Fahrenheit oven. 18-20 minutes.

    Serve hot. I like a spoonful of chunky salsa and a dollup of sour cream on top.
