This recipe is from Mullumbimby,Northern NSW - affectionately known as the ' biggest little town in Australia'. It is a small town with a big heart and a vibrant community. Everyone had banana trees, or a neighbour who shared theirs. I love this recipe -it's simple, works every time and reminds me of friends and good times.

Ingredients

  1. 250 gbrown sugar- I use a mix of raw and dark brown sugar
  2. 350 gmashed banana
  3. 220 gnatural yoghurt
  4. 4free range eggs- gently beaten
  5. 1 teaspoonvanilla essence
  6. 340 gself-raising flour
  7. Greased loaf tin
  8. Oven preheated to 170 degrees celcius

Cooking Instructions

  1. 1

    Mix first five ingredients together in a bowl

    Gently fold in the flour

  3. 3

    Pour into a greased loaf tin or cake tin

  4. 4

    Bake for approximately 40minutes until slightly brown and cooked through- use the skewer test.

  5. 5

    Cool slightly and turn out onto a wire rack to cool

  6. 6

    Can be served warm or toasted
