I like to have a salad with every meal. This is quick and easy. You can substitute and add any types of veggies you prefer. But this is my everyday salad!

Ingredients

5 servings
  1. 1/2 headiceberg lettuce
  2. 1/2 bunchromaine hearts
  3. 1 cupspring mix lettuce
  4. 1 largeslicing cucumber (peeled)
  5. 3/4 packagesgrape tomatoes
  6. 1/2 dozenbaby carrots (cut into quarters)
  7. 1 cupmozzarella cheese
  8. 4 tbspspanish olives (green olives)

Cooking Instructions

    Cut iceberg lettuce and romaine hearts up to your desired size. I like big leaves, but you can prepare how you like.

    Add spring mix to bowl with other lettuces.

    Peel the cucumber, cut into quarters, and add to bowl.

  4. 4

    Add grape tomatoes. You can half these if preferred.

  5. 5

    Quarter the baby carrots. Add to bowl.

    Add olives.

  7. 7

    Garnish with mozzarella and serve with your choice of dressing!
