Ingredients

  1. 1/2 cupfine bulgur
  2. 4 cupsparsley, flat-leaf parsley finely chopped, about 3 bunches
  3. 1 1/2 cupstomatoes, diced, about 3 to 5 tomatoes
  4. 1/4 cuponions, white and finely chopped
  5. 1/4 cupgreen onions, chopped, around 2 onions
  6. 1/2 cupmint leaves, finely chopped
  7. For the dressing
  8. 1/2 cuplemon juice, freshly squeezed
  9. 1/4 cuppomegranate paste
  10. 1 teaspoonsalt
  11. 1/2 cupolive oil

Cooking Instructions

    Pour bulgur in water and Let stand 5 to 10 minutes or until most of the liquid is absorbed and bulgur is fluffy and tender. Pour off any remaining liquid.

    To prepare dressing, whisk together lemon juice,pomegranate syrup, salt and olive oil. Taste and adjust seasonings.

    In a large salad bowl, toss together parsley, tomatoes, green & white onions and mint.

    Add bulgur. Pour dressing over salad, toss to combine. Taste and adjust seasonings.
