Beans and plantain with pumpkin leaf

I've never thought of using pumpkin leaf in making my beans not until Saturday. I've always used scent leaves. But, I after eating this one, I think I'll be using it henceforth. If possible combining both scent leaves and pumpkin together. Back to what made me us the leaves. I actually bought the leaves to make soup on Friday but couldn't use all. So, o started contemplating on what I will do with the leftovers. Then the thought of adding to my beans came and that was how I came up with this recipe.

Ingredients

  1. 2 cupsbeans (market cup)
  2. 4medium sized plantain
  3. 2medium sized onions
  4. Fresh pepper (to your taste)
  5. Crayfish(lots of it)
  6. leavesPumpkin
  7. 1knorr cube
  8. 1 cuppalm oil
  9. to tasteSalt

Cooking Instructions

  1. 1

    Firstly, place a pot of water on fire, pour your beans. Once it boils pour out the beans,wash and put and fire with a clean water.

    Cook till it's tender. Peel your plantains, cut into desirable shapes and sizes. Stir into the beans, add some crayfish and onion.

    Add your Knorr cubes and salt. Cover and cook for about 8mins

  4. 4

    Pound your pepper and crayfish, set a pan on fire, add oil, heat up a little bit and then add your onion and pepper mix. Fry for about 2mins.

    Stir into the beans, stir together, allow to simmer for another 2mins more then add your chopped and washed vegetable.

    Stir together and your beans is ready. Enjoy with a cold soft drink of your choice 😋😋
