Peel the mangoes and setaside..squeeze the mango skin and collect all the juice in other bowl

In a pan dry red chillies cumin seeds..mustard seeds..this should take 3-4 minutes..roast the spices on low flame.

Grind together...all roasted spices ginger garlic n onions with a little bit water

Heat oil in a pan and add curry leaves..once they start spluttering add the ground spices mixture and turmeric powder..cook for 8 to 10 mins. Till you see drops of oil on the sides.

Add mangoes..juice from the skin and a cup of water with salt..bring this to a boil and simmer it for 5 to 10 mins till the gravy thickens..serve it with hot rice..

If you want a stronger mango taste I suggest doubling the mango but you will need to cook the sauce longer to get the desired thickness.
