Ingredients

  1. 3 tablespoonsrefine oil
  2. 1small onion, chopped
  3. 2 clovesgarlic, minced
  4. 1 teaspoonground cinnamon
  5. 3 tablespoonscurry powder
  6. 1 teaspoonpaprika
  7. 1bay leaf
  8. 1/2 teaspoongrated fresh ginger root
  9. 1/2 teaspoonwhite sugar
  10. to tastesalt
  11. 350 gmschicken
  12. 1 tablespoontomato paste
  13. 1 cupplain yoghurt
  14. 3/4 cupcoconut milk
  15. 1/2lemon juice
  16. as requiredChopped Coriander Leaves

Cooking Instructions

    Heat refined oil in a skillet over medium heat. Saute onion until lightly browned. Stir in garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar and salt. Continue stirring for 2 minutes. Add chicken pieces, tomato paste, yogurt, and coconut milk. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes.

    Remove bay leaf, and stir in lemon juice and cayenne pepper. Simmer for 5 more minutes.
