My kids come home from their club activities exhausted and hungry. I didn't want to keep them waiting, so I made this real quick with eggs and pork.
You can adjust the amount of egg and Parmesan cheese to your taste.

Cooking Instructions

Beat the egg and add the minced parsley, parmesan cheese, and black pepper. Mix together very well.

You don't need to spread out the pork slices... coat each slice with the egg mixture.

Heat oil in a frying pan. Cook the pork on medium-low heat, taking care not to burn it. Once they are nicely browned, they're done.

My boyfriend loves capers and lemon so I always try to find s solid recipe staple. Note to self- originally I subbed caper juice for the chicken broth which was wayyy too intense.
