With a 3 month old girl, I'm always looking for easy recipes I can make in a short amount of time without having to go shopping for extra ingredients. I decided to allow myself a little oil in this recipe since my mastitis has gotten better.

It's very richly flavored. If you like lighter flavors, please reduce the amount of seasoning ingredients.
Use any vegetables and other ingredients you have in the refrigerator!
I recommend adding lots of chopped green onions.
Frozen Sanuki udon noodles are firm and delicious.
You can also use kishimen noodles or yakisoba noodles instead. For 1 serving. Recipe by Piyokonoshokutaku

Ingredients

1 serving
  1. 1pack Udon noodles (frozen is ok)
  2. 1what i had in the refrigerator: Additional ingredients (I used the following this time)
  3. 1/2 bag* Bean sprouts
  4. 1Chikuwa
  5. 1/2 tbspSesame oil
  6. 1 tbsp●Oyster sauce
  7. 1 tbspSoy sauce
  8. 1/2 tsp● Chicken soup stock granules
  9. 2 tbspWater
  10. 1Mayonnaise
  11. 1generous amount Chopped green onions

Cooking Instructions

  1. 1

Wash the bean sprouts and drain. Slice the chikuwa into rounds or diagonally. Combine the ● ingredients. If you're using frozen udon noodles, defrost them in the microwave. (50 seconds at 1000 W on one side, then flip over and microwave for another 40 seconds.)

  2. 2

Heat up the sesame oil in a frying pan and stir fry the bean sprouts and chikuwa. When the bean sprouts are cooked, add the udon noodles and the combined ● ingredients, and stir fry while untangling the noodles. Be careful not to let the flavoring ingredients burn.

  3. 3

When there's almost no moisture left in the pan and the udon noodles are cooked, transfer to a serving plate and top with mayonnaise and chopped green onions to finish.

  4. 4

I really recommend bean sprouts and chikuwa as additions to this udon dish. They're healthy and delicious!
