Simple tomato cucumber salad

When my daughter is 17 I took her to the only Morrocan restaurant which was about an hour and a half from my home. She is Really like to taste all different cultures when I was in my early 20s I used to eat at a Moroccan restaurant when I go on a date it was a lot of fun tasted great. The night we went out to dinner it just did not taste the same as it did 40 years ago. my daughter knows whenever I eat out I can always I can make this better and that’s what I did.

A light "chunky" side dish to compliment most grilled BBQ meals or serve with Italian dishes. The fresh basil gives it a nice flavor. Add a “hint of mint” (instead of basil) and black olives for a slight, cool refreshing taste, especially with Mediterranean dishes of lamb, grilled chorizo and/or seafood.

I don't like too tangy of cucumber salad. This salad is just right but I am sure that if it is too tangy you could add more water and if it is not tangy enough just add more vinegar.

For this salad, I use European or Persian cucumbers because they look nicer, have almost no seeds, and have very thin skin. You can use thick-skinned cucumbers, but you'll need to peel them or leave strips and remove the seeds if you don't like them.

I modified a tomato salad dish from a curry restaurant in Japan where I would often visit.Be careful, the tomato will get too soft if you boil it for too long while in the process of removing its skin.Top it off with a little sesame oil if you like.It becomes a gorgeous appetizer if served in a cocktail glass.
