Caesar Salad Dressing

This is my absolute favourite salad and I love ordering it when I go out to eat. I wanted to try and make a slightly lighter healthier dressing than traditional caesar salads and found it was just as enjoyable. The caesar dressing and crouton quantities are enough for two people but I'll leave it to you to decide how much of the salad ingredients to use depending on your hunger levels!

Cooking Instructions

Preheat the oven to 180°C fan
- 2
In a blender add all the caesar dressing ingredients aside from the salt and pepper and blend until lump free

Season the dressing with salt and pepper to your taste

Dice bread into roughly 1cm by 1cm pieces and then coat in oil, salt and oregano
- 5
Place croutons onto a lined baking tray and place in preheated oven for 14 mins or until golden brown and crunchy
- 6
Remove croutons from the oven and allow to cool
- 7
Place your desired amount of lettuce, cucumber, avocado, anchovies into bowls and then drizzle on caesar dressing, croutons and a little more parmigiano reggiano to finish

I've used cashews in place of the egg and oil than would normally be in a Caesar dressing and nutritional yeast instead of parmesan cheese to make this 'Jack friendly' for his sandwiches.
