That's definitely not a traditional Lebanese Tabbouleh, but @Knivett and I wanted to cook something quick with other small sides for lunch so I decided to make Tabbouleh salad with chickpeas instead of bulgur to make it more filling.

Ingredients

  1. Bunchparsley, finely chopped
  2. 4spring onions, finely sliced
  3. 2medium tomatoes, finely chopped
  4. few leaves of mint, finely chopped
  5. cupcooked chickpeas
  6. dressing
  7. Juice of 1 lemon or lime
  8. salt
  9. 1 teaspoonpomegranate molasses
  10. generous drizzle of olive oil

Cooking Instructions

    Very simple - finely chop all the ingredients and mix together in a bowl

    Combine the ingredients of dressing and pour it over the vegetables and chickpeas and gently toss to combine the flavours (if you're using a fork or a spoon, mix gently so that you don't crush the ingredients)

  3. 3

    Serve on its own for lunch if you're having a big portion or with other sides like Hummus and grilled halloumi!
