Ingredients

  1. 1 packcooked green soba (you can buy in supermarkets)
  2. 1cub cabbage (slices)
  3. 1 handfulmint leaves
  4. 1 handfulgreen beans
  5. 1 tspsesame seed
  6. 1lime
  7. Green young peppercorn (optional)
  8. Asian pesto
  9. 1 handfulcoriander
  10. 1 tbspchilli flakes
  11. 2 tbspfresh grated ginger
  12. 1garlic grated
  13. 1 handfulon mint leaves
  14. 1shallot
  15. 1 tbspsoysauce
  16. 1 tspsesame oil
  17. 1 tbspagave syrup (you can use honey or maple syrup)
  18. Salt and pepper

Steps

  1. 1

    Making Asian pesto, roughly chopped coriander, mint and shallot. Put into a blender with chilli, grated ginger, garlic, soysauce, sesame oil and syrup. Blend them all together. All salt and pepper to taste.

    On a medium heat nonstick pan add cabbage in and quick stir fry for 2-3 min. Take it out.

  3. 3

    Put all the ingredients together in a big mixing bowl. Add the salad dressing in and mix well.

  4. 4

    You can have it in room temperature or keep it in the fridge for cold noodle or picnic 🧺
