Mike's Southwestern Queso Dip

Super easy and super cheesy! Perfect for game day! Especially alongside homemade thick assed salty, crispy flour tortilla chips. Also, ice cold Mexican beers in frosty mugs!

Please excuse the photo bombs by my wife Tammie. She just gets SO stupid excited when I make this dip for her and her friends for the weekend games.

Granted, she's a dork. But know this - she's MY dork! ;0) Tho I must admit, I do LOVE making that sweet little baby girl smile every time!

Anyway, feel free to add fried and fully drained ground beef and hot sauce to this dip for extra flavor and protein! Your favorite chili goes great with this as well! I promise you, it's freaking delicious! Fresh pretzels work great with this dip as well!

Ingredients

  1. ● For The Queso Dip
  2. 2 PoundsVelveta Cheese [cubed - room temp]
  3. 1/2LG Tomato [fine chopped - de-seeded]
  4. 1/2 CupColorful Bell Peppers [fine chopped - de-seeded]
  5. 1/2 CupWhite Onions [fine chopped]
  6. 1/2 CupRed Onions [fine chopped]
  7. 1 tbspFresh Garlic [fine minced]
  8. 1 (8 oz)Package Shredded Mexican 3 Cheese [room temp]
  9. 1-2 CansROTELL Tomatoes [drained]
  10. 1 tspGround Cumin
  11. 1 tspFresh Ground Black Pepper
  12. 1 tspCrushed Mexican Oregeno
  13. 1 (4 oz)Can Hot Hatch Diced Green Chilies
  14. 2LG Jalapeno Peppers [de-seeded - fine minced]
  15. 1 bunchFresh Cilantro Leaves
  16. 1/4 CupFresh Parsley Leaves

  18. 1 Pound80/20 Hamburger Meat [fried and fully drained]
  19. as neededYour Favorite Hot Sauce

Cooking Instructions

    Here's what you'll need. Well, everything other than, "The Tammie." Seriously? Is it just me or does she look a bit like Gollum in this picture or what? You know, "MY PRECIOUS!" It's unbelievable to me how something so simple makes others so stinking happy!

    Gawd. What a dork huh? Anyway, cheeses and ROTELL pictured. [and of course, "The Tammie"...] I assure you, Vanna White she is not. But God bless her excited sweet little stupid heart.

    CHEESE! CHEESE! CHEESE! CHEESE! Melt cheese in microwave for 3 minutes. Stir well and heat again until fully melted, smooth and blended via whisk.

    Add super fine diced vegetables and seasonings and mix well. Reheat for 3 to 5 minutes following. Use 1 to 2 cans of ROTELL as desired. Drained. I usually use 1 1/2 cans but it's up to you!

    Viola! Serve super hot with thick crispy tortilla chips [seeing as how it's a very thick dip] and ice cold Mexican beers! [minus the Tammie - unless of course you want her there. she is available] Anyway, enjoy! ;0)
