Steps
- 1
Soak the basmati rice for 15-20 minutes and drain.
- 2
Boil it with water by adding salt to taste. Cook the rice firm and al dente but not mushy. Drain the rice to a colander.
- 3
Heat ghee in a pan and add cumin seeds. When they splutter, add cinnamon, cardamom, cloves and star anise. Saute for a few seconds.
- 4
Next add all the dry fruits. Fry till light golden brown.
- 5
Now add boiled rice and saffron. Mix gently and cook for 2-3 minutes. Add biryani masala and mint leaves. Mix well and turn off the flame after 1 minute.
- 6
Add little more ghee. Fluff the rice with a fork.
- 7
Serve hot garnished with mint leaves.
