Amritsari Chole Momos

Mix all the ingredients mentioned in dough section, then add required amount of water in it & make a smooth dough out of it & let the dough rest for about 15 minutes.

Meanwhile, heat 1 tbsp oil in a pan, add chopped onions, when it turns translucent, add ginger garlic paste, red chilli powder, turmeric powder, roasted cumin & coriander powder, amchur powder, garam masala powder, crushed pomegranate, salt stir well then add small amount of water again stir & add chopped tomatoes.

As the tomato gets cooked add the boiled potatoes & boiled chickpeas & mix them well in the spices.

Now add the tomato ketchup, chopped green chillies, chopped coriander in it & stir well. When the gravy gets a nice thick texture remove the chole from heat sauce.

Now take the momo dough, knead well & cut into pieces as shown below & sprinkle some maida in the pieces. Then roll each piece in such a way so that they get small flat bread shape with medium thickness & add 2 tsp cooked chickpea mixture & fold them in your desired momo shape. Make all the momos following this process.

Then steam the momos for about 5-8 minutes (for steam method, heat water in a deep bottomed utensil, then place another utensil above it & add the momos in it then cover it with lid till they are cooked well.)

And your Amritsari Chole Momos are ready to serve! Garnish them with fresh coriander. Serve them hot with your desired sauce/chutney.
