To prepare ukkarisida akki rotti or plain rice flour roti, first take water, salt and oil in a pan and keep it for boiling. If you are not sure about rice flour quality, use 1 cup of water and 1 cup of rice flour. Then while kneading the dough you can add the water if required.
Next when the water starts boiling add in rice flour, give a quick mix and switch off the stove.
After switching off the stove, mix it well using a flat spatula, close the lid and keep it aside. - 4
Once the dough is warm, knead it very well. Squeeze, punch, fold and knead it for five minutes. Better you knead, easy to make rotis.
Once you are done with the kneading, dust your fingers, pinch and take big lemon sized dough. Again knead the dough using palms and make a soft flat ball.
Dust the flour and roll the flat balls into thin rotis. Please note you have to be gentle while making this roti.Heat the tava or pan and transfer the rolled rotti or roti over the hot pan.
- 5
Apply water on the roti using a clean and wet cloth. Please note, you need to be gentle and quick.
Once you start seeing the small bubbles, flip the roti and cook on the other side.
Alternately, you can cook the roti directly over the flame. To do that, first cook the rotis over the pan for small duration and then transfer it directly over the flame, cook on both sides. Serve it with any curry of your choice. - 6
Now making roll.........spread butter on roti then thecha, add any salad of your choice I use simple chopped onions, capsicum, kakadi, cabbage, mint leaves and dhniya leaves then add mashed potatoes of dum aloo then roll and enjoy. The taste of thecha and kashmiri flavoured aloo is 😋
