Potato Biird's Nest

This is one sort of cutlet made of potato and vermicelli and served specially in a kiddie party. This kid friendly recipe is a vegetarian one. The nonvegetarian version of this recipe can also be prepared with minced chicken.

Take all the ingredients such as potato, onion, green chilli, turmeic powder, chilli powder, cumin powder, coriander powder, garam masala powder, ginger garlic paste, coriander leaves and salt in a mixing bowl.

Mix everything well to make a dough.

Make small balls of the potato mix/ dough.

Gently flatten each ball and make a small well/ hole in the centre of the patty. Keep aside.

In a small bowl add all purpose flour, corn flour, salt and water to make a thick paste/ batter.

Now gently dip each potato nest in the flour liquid mix and then coat with the vermicelli. Repeat the procedure until all the nests are coated in same manner.

Heat oil in a pan. Once hot, gently add in the prepared nests and fry until golden brown.

Take out with a slotted spoon and place on a tissue paper.

Next heat milk in a pan on low medium flame. Add sugar and salt. When milk starts to boil, slowly add semolina and stir it continuously until you get a thick dough. Keep the dough in room temperature to cool and knead it by adding one spoon ghee to make it more soft.

Make tiny balls of the dough by rolling with the help of your palms. Give them shape of the bird's egg.

Next place the fried nest in a plate, garnish with coriander leaves and then top with 2-3 semolina eggs.

Serve with any sauce or ketchup.
