Cut paneer in square chunks and Soak the cashews in water for half an hour and ground to make a fine paste.

Grind tomatoes, ginger and green chilli to make a paste. Take out the paste in a bowl.

Heat ghee, When ghee is hot, add cumin seeds. After sauteing cumin seeds for a while, add turmeric powder and coriander powder. Saute for few minutes and add tomato paste.

Stir constantly and keep sauteing. Now add cashew paste and malai to the masala and saute until oil starts separating from it.

Add water as desired to make gravy. Also add salt and red chilli powder.

When the gravy starts simmering, place the paneer chunks and cook on low flame for 3 to 4 minutes so that paneer chunks absorb all the spices. Shahi paneer sabzi is ready, turn off the flame and add some green coriander and garam masala.
