Lettuce Cups (mango & pork)

Created this recipe using pork but you could use shrimp, vegtables or paneer even. We had these before a seafood coconut curry and they were the perfect starter. These cups really pack a flavour punch and every bite is interesting, sweet mango, spicy pork and crunchy topping. They are awesome, so pretty and really easy to make, so great for entertaining. Tone down the chilli and they are great for kids.
Lettuce Cups (mango & pork)

If you have the time marinate the pork overnight in the ginger, garlic, lemongrass, soy and chilli befor you cook

In a wok or pan on a high heat add sesame oil and then the onions and cook for just a min or 2, then add the pork along with the marinade.

Cook the pork on all sides until brown and turn the heat down a bit. cook for a few minutes.

When the pork is cooking prepare all the garnish and mango for the lettuce cups.

Arrange your cups on a platter and fill the mango that has been mixed with a little grate of garlic and dried chilli flakes (just a bit) and 1/2 the lime.

Make sure your coriander, peanuts, lime zest, and radish is chopped and ready to go.

Once the pork is reday add a squeeze of lime and drizzle of honey, give it a good stir and and top the mango with it.

Next sprinkle each lettuce cup with the zest, nuts, coriander and radish each garnish adds colour, texture and flavour to the cups.

Addin extra chilli sauce is optional and not essential maybe just drizzle a bit around the cups so people can dip if they want to.
