Finely chop the red onion and coriander (leaving some coriander for garnish)

Scoop out half the tin of sweetcorn and put aside.

Blend the remaining half of the sweetcorn, the onion, coriander, flour, paprika, egg, olive oil and lime juice together until mixed but still chunky.

Stir in the remaining sweetcorn you set aside, until the mixture is a batter consistency. Add water or flour if needed.

Heat a frying pan with a splash of oil on medium heat and spoon the fritter mixture in to make patties.

Fry until golden brown on each side and cooked throughout, about 5 minutes.

Serve with plenty of Greek yoghurt, toasted nuts and seeds and fresh coriander.
