Ingredients

  1. 1 cuprinsed quinoa
  2. 1 cupboiled black beans
  3. 1 cuproasted tomatoes
  4. 4 tbsproasted chipotle peppers
  5. 1-3chopped jalapeno
  6. 1/2 cupchopped onions
  7. 1/2 cupfresh corn
  8. 3-4minced garlic
  9. 1 tspcaneyan pepper
  10. 1 tspcumin powder
  11. Salt as per taste
  12. 1 cupvegetable broth
  13. 2 tspolive oil
  14. 1 tspchilli powder
  15. 1/2 tsppepper powder
  16. Water as required
  17. Chopped avacado for garnishing

Cooking Instructions

  1. 1

    Heat a pan add oilve oil,add chopped onions, garlic and jalapeno stir it for few minutes..

  2. 2

    Then add quinoa, black beans, toasted chipotle peppers and roasted tomatoes stir it for few minutes then add the dry spices

  3. 3

    Then add water cover the lid and cooked it until all the water evaporates garnished with avacado served hot...
