  • 1 CupQuinoa
  • 1Tomato (Diced)
  • 1/2English cucumber (Diced)
  • 1/4Medium Red Onion (Minced)
  • 1/2Lemon (Juiced)
  • 2 TbspOlive Oil
  • 2 TbspFresh Cilantro (Chopped)

Steps

  1. 1

    Cook Quinoa according to package instructions. Drain.

  2. 2

    In a large bowl, toss the quinoa, tomato, cucumber, onion, lemon juice, olive oil, and cilantro.

  3. 3

    Season. Serve hot or cold.

  4. 4

    Nutrition per serving: 230 Calories, 7g protein, 30g carbs, 4g fiber, 9g fat.
