Vegetable jalfrezi is nutritious mixed vegetables curry. Add paneer as an ingredient makes the recipe rich in protein. In this recipe contain mixed vegetables cooked in masala and tomato sauce base.

The curry made from mixed vegetables we get the benefits of nutrients from cauliflower , cabbage ,beans , capsicum,green peas and carrots. We also get protein from paneer and vitamin c , antioxidants from tomato paste. The chopped vegetables are blanched and then cooked .This recipe goes well with hot rotis , a roll or a wrap ,as you like.

Ingredients

4-5 servings
  • 1/2 cupcarrot,chopped diagonally
  • 1/2 cupdiagonally cut french beans
  • 1/2 cuppar boiled cauliflower florets
  • 1 cuppaneer cut in square and lightly friend
  • 1/4 cupfresh tomato pulp
  • 1large,onion, thinly sliced
  • 1/2 tspginger paste
  • 1 tspgarlic paste
  • 1/3 tspchilli powder
  • 1 tbspcoriander leaves, finely choppe
  • 1/2 tspgaram masala powder
  • 1 tspcumin seeds
  • 1/4 tspturmeric powder
  • 1 tspcumin - coriander seeds powder
  • 1/3 tspcrushed kasoori methi
  • 2 tbspcooking oil
  • As per taste Salt

    Heat oil in kadhai. Fry the cut paneer lightly. To the same oil add cumin seeds and allow to splutter.

    Then add ginger as well as garlic paste and saute in medium flame for half a minute.

    Mix chopped onion and saute till translucent. Add the parboiled vegetables and saute.

  4. 4

    Mix all the dry masala powder from red chilli powder to kasoori methi and salt in the ingredients section.

  5. 5

    Add the paneer and 1 tbsp water, mix well and cook covered for 2-3 minutes, stirring in between.

  6. 6

    When vegetables are soft, add the tomato paste and mix well with paneer and vegetables.

  7. 7

    Add chopped coriander, cover and cook for a minute on medium flame.

  8. 8

    Serve hot vegetables and paneer jalfrezi with roti, paratha,naan.
