Cooking Instructions

Pour about 1 cup of milk into a bowl and add the cornstarch. Stir until the cornstarch is completely dissolved.

Add the 8 egg yolks and the sugar. Whisk well until everything is fully combined.

In a wide saucepan over low heat, warm the remaining milk. Add the cinnamon stick and lemon peel.

When the milk starts to boil, remove it from the heat and take out the cinnamon stick and lemon peel.

Add the egg and sugar mixture to the milk. Stir to combine.

Return the saucepan to the lowest heat. Keep whisking constantly so it doesn't stick, until it starts to boil again and thickens.

Once it boils, remove from the heat and pour the custard into individual clay dishes or a serving dish. Let it cool.

When ready to serve, sprinkle sugar on top and caramelize it with a kitchen torch or a hot iron until the sugar forms a crisp, caramelized layer.
