Ingredients

  • *Use some of the ingredients listed below. You don’t need to use seven ingredients even though ‘Shichimi’ means seven flavours
  • Dried Hot Red Chilli *Dried Chilli Flakes can be used
  • Dried Ginger *sliced and dried
  • Dried Mandarin Orange Rind
  • Dried Yuzu Rind
  • Dried Shiso (Perilla)
  • Sanshō (Japanese Pepper) OR Sichuan Pepper
  • Toasted Sesame Seeds
  • Hemp Seeds
  • Poppy Seeds

Steps

  1. 1

    Today I used Dried Chilli Flakes, Dried Ginger, Dried Mandarin Orange Rind, Dried Yuzu Rind, Toasted Sesame Seeds.

    All ingredients must be dry. Using a Suribachi (Japanese mortar) or grinder, grind each ingredient into small flakes, and combine.

    *Make a small amount.
    *Do not grind Toasted Sesame Seeds too much as Oil would come out.
    *You need to take extra caution when you grind Dried Chilli.

Hello @hirokoliston ! I write a question here as it seems there is no “message” or “contact” facility in cookpad. I have a sansho tree in my garden and now is the time to harvest the leaves. What can I do with them? (Not tsukudani with little fish) I dried the leaves and keep in the jar to sprinkle to salad/fried rice. What else can I do?
